Our chicken burgers are a crowd favourite!

The recipe is designed so you can easily make a small batch or go large. If you’re starting small with 500g of chicken mince, simply divide the ingredients by 3. Or if you’ve got 1kg of chicken mince to play with, take off 1/3. Easy!

We always have a batch of these ready to go in the freezer. Enjoy!

Ingredients

  • 1.5kg chicken mince
  • 4-6 tbs Thai red curry paste (depending on your spice tolerance)
  • 6 shallots, finely chopped
  • 3 tbs sweet chilli sauce
  • 3 eggs
  • 1 cup (250g) cottage cheese
  • 1 1/2 cups breadcrumbs
  • 6 tbs fish sauce
  • 3 tbs soy sauce
  • 1 1/2 cups fresh coriander, roughly chopped
  • spray oil

Method

  1. Combine all ingredients in a large bowl. Mix well with a spoon first, then use your hands to blend evenly
  2. Using a 1/2 cup measure, shape into 15 x 2-3cm thick patties. Place onto a tray, cover and leave in the fridge overnight or for 30 minutes
  3. Heat barbecue or large fry pan on low heat.
  4. Spray patties with oil. Cook slowly for 10-15 minutes, turning frequently to prevent burning until cooked through.
  5. Serve on a whole grain bun or large wrap with salad items of choice. We love beetroot, tomato, cucumber, grated carrot and salad leaves.
